Why Baking Soda Tenderizes Meat

A pinch of sodium bicarbonate changes the surface chemistry of meat before it ever hits the pan. Here's the reaction behind the technique - and exactly how much to use.

The core idea

Raw meat sits slightly acidic. Baking soda is alkaline. Brush it onto the surface and the pH climbs - which stops muscle proteins from bonding tightly when heat hits them, so they trap moisture instead of squeezing it out.

The Chemistry

Muscle tissue is mostly water held inside a scaffold of proteins - chiefly myosin and actin. Cook meat at its natural pH (roughly 5.5–6.5) and heat makes those proteins coil tight and cross-link with one another, wringing water out of the structure like a squeezed sponge. That's what makes an overcooked cut dry and stringy even before it's overcooked.

Sodium bicarbonate (baking soda) is a mild base, roughly pH 8–9 in solution. Applied to the meat's surface, it pushes the local pH up and away from the proteins' isoelectric point - the pH at which they carry no net charge and clump together most readily. Away from that point, the protein strands carry a slight negative charge and repel each other rather than bonding tightly. The result: a looser protein matrix that holds onto more water and stays tender under heat.

Baking soda moves the meat's surface pH away from the isoelectric zone of myosin and actin - the range where these proteins carry no net charge and bond together most readily. Farther from that zone, the proteins repel each other and hold water instead of expelling it.

What It Looks Like at the Fiber Level

Untreated → heat

Proteins coil tight and bond to each other under heat. Water is forced out of the structure - the fibers squeeze like a wrung sponge, so the meat turns dry and firm.

Baking soda → heat

The alkaline surface keeps strands charged and spaced apart. They resist bonding, so water stays trapped between them - the fibers stay loose and the meat stays juicy and tender.

How Much to Use

The right method - and dose - depends on the cut. Too much, or too long a soak, pushes past "tender" into "mushy" and can leave a faint soapy aftertaste, since bicarbonate itself has a bitter, alkaline flavor.

Sliced or cubed meat

Stir-fry beef, chicken breast, pork - the "velveting" method

Toss meat with baking soda by hand so it coats evenly. Always rinse before cooking - this is the step that removes the aftertaste risk.

Ground meat

Mixed straight into ground meat, the same pH shift also speeds up the Maillard reaction - the browning reaction between amino acids and sugars - so patties can brown faster and darker.

Process

Measure
Weigh or portion the meat, then measure baking soda against that weight - not by eye. Under-dosing just wastes the step; over-dosing is what causes the soapy taste.
Coat
For sliced or cubed meat, dissolve the baking soda in a splash of water and toss it through by hand so every surface is coated evenly. For ground meat, knead it directly into the mix.
Rest
Refrigerate sliced or cubed meat for 15–30 minutes. The reaction happens fast - going much past 30 minutes risks an overly soft, almost mushy texture rather than more tenderness.
Rinse & cook
Rinse sliced or cubed meat under cold water and pat completely dry before it hits the pan - a wet surface won't sear. Ground meat skips this step entirely and goes straight to the heat.

Where this technique earns its keep: tougher, leaner cuts and thin-sliced stir-fry meat - the ones that go rubbery fast under high heat. It's overkill on already-tender cuts like filet, and it won't fix collagen-heavy cuts that need long, slow cooking instead of a quick pH shift.
