Chicken

  • 4boneless, skinless chicken breasts, about 6 oz each
  • ½ tspkosher salt
  • ¼ tspblack pepper
  • 1 Tbspneutral oil

Sauce

  • 3 Tbspgochujang
  • 2 Tbsphoney
  • 1 Tbspmirin (or 1 tsp sugar plus 1 Tbsp water)
  • 1 Tbsplow-sodium soy sauce
  • 1 tsprice vinegar
  • 1 tsptoasted sesame oil
  • 2garlic cloves, minced
  • 1 tspfresh ginger, grated

To serve

  • 4 cupscooked short or medium grain rice
  • 2scallions, sliced
  • 1 tsptoasted sesame seeds

    Heat the oven to 425°F. Line a sheet pan with foil or parchment.

    Whisk every sauce ingredient together. Taste it: more honey to soften, more gochujang to push the heat.

    Pound the chicken to an even ¾ inch. Pat dry, season with salt and pepper, rub with the oil, and lay it on the pan.

    Brush on half the sauce. Roast 12 minutes.

    Flip, brush on the rest, and roast 8 to 10 minutes more, until the thickest piece reads 165°F.6

    Switch to broil for 1 to 2 minutes, watching closely, until the surface blisters.
