Cut less bitter, taste more fruit
Grapefruit bitterness isn't random - it's structural. Here's the anatomy of why it happens, and exactly how to cut around it.
A flavonoid concentrated in the white pith and segment membranes - not the flesh. Remove those layers and you remove most of the bitterness.
Four things working against you
Pith (white layer)
Loaded with naringin. Even a thin strip left on the flesh transfers significant bitterness to each bite.
Segment membranes
The papery walls between segments are bitter. Removing them makes a dramatic, immediate difference.
Cold temperature
Cold dulls sweetness receptors more than bitterness receptors. Room-temp grapefruit tastes noticeably more balanced.
Oxidation
Cut surfaces oxidize quickly, intensifying bitter compounds. Eat soon after cutting, or add acid (lime juice) to slow it.

Let it come to room temperature
Remove from the fridge 20β30 minutes before eating. Underrated step.
Slice off both poles
Cut flat bases top and bottom, removing enough to expose a full ring of flesh - not just outer skin.
Peel following the curve - zero pith
Stand the fruit on its flat base. Slice downward in curved strokes following the fruit's contour, removing peel and all white pith in one pass. Work all the way around. No white patches.
Supreme the segments
Hold the peeled fruit over a bowl. Slide your knife along both sides of each membrane to free pure flesh segments. Let them fall into the bowl. Squeeze the membrane carcass for juice.

Amplify sweetness further
Pinch of salt
Salt suppresses bitterness receptors while amplifying sweetness. A tiny pinch on cut segments makes a measurable difference.
Honey drizzle
Sweetness directly counters naringin's palate effect. Raw honey adds complexity without masking the fruit's natural flavor.
Lime juice
Slows oxidation and brightens flavor. More acid can paradoxically reduce perceived bitterness by shifting the overall flavor balance.
