Salt is the only seasoning that changes food - everything else just flavors it
Sugar, herbs, chiles - they sit on top of food. Salt gets inside it: it pulls out water, unwinds proteins, and rewires how your tongue reads every other flavor in the dish. Three jobs, one ingredient
Osmosis
Salt draws water out of cells toward itself. On a steak, that water carries the salt back in over time. On a sliced eggplant, it just leaves - which is why salting vegetables can dry or season them, depending on what you do next.
Protein
Salt loosens the tightly-wound proteins in meat and egg whites, letting them hold more moisture as they cook. That's the difference between a dry chicken breast and a juicy one.
Perception
Salt suppresses bitterness and amplifies sweetness and aroma. It doesn't make food taste "salty" so much as it makes food taste more like itself.
Not all salt measures the same
Grain size changes how much salt fits in a teaspoon, which changes how salty your food actually is. If a recipe just says "salt," it matters which one you reach for.

Whatever recipe you're following, check which salt it was written for. Swapping Morton for Diamond Crystal one-for-one by volume can leave a dish noticeably under-salted, and the reverse can oversalt it.

Meat & poultry
Salting well ahead of cooking - an hour for thin cuts, up to overnight for a whole roast or turkey - gives the salt time to dissolve, pull moisture out, and then get pulled back in along with itself. That seasons the meat all the way through and helps it hold onto more juice as it cooks.
How to use it: Salt uncovered on a rack in the fridge (a dry brine) rather than right before the pan. Salting minutes before searing pulls moisture to the surface without time to reabsorb it, which fights browning.
If you forgot to salt ahead, season generously right before cooking rather than skipping it - a rushed sear still beats an unseasoned one.
Stews & braises
A stew reduces as it cooks, concentrating everything in the pot - including salt. Season fully at the start and you risk an oversalted result hours later.
How to use it: Salt lightly at the start to season the meat and vegetables as they build flavor, then taste and adjust in the final 20β30 minutes once the liquid has reduced to where it will end up.
Taste right before serving, not when you first put the lid on - a braise's salt level moves as much as its flavor does over hours of cooking.
Eggs
Salt breaks down the proteins in egg whites, which is exactly what makes them tender - but only if it has time to work. Salt too far ahead of scrambling and the eggs can turn watery and gray before they hit the pan.
How to use it: For scrambled eggs or omelets, salt right before cooking, whisking it in as you go. For a dish like deviled or fried eggs where texture is set, salt at the table or on the plate instead.
A pinch of salt in beaten eggs a few minutes before cooking - not hours - makes them noticeably more tender, not just seasoned.
Vegetables
Vegetables are mostly water held inside rigid cell walls. Salt pulls that water out through osmosis, which is useful for watery vegetables you want to concentrate, and less useful - even harmful to texture - for vegetables you want to stay crisp.
How to use it: Salt eggplant, zucchini, or cucumber ahead of time and let them sit in a colander to shed water before cooking or dressing. For roasting or sautΓ©ing quick-cooking vegetables, salt going into the pan so the surface seasons and browns.
Salting cucumbers for a salad 15β20 minutes ahead and draining them prevents a watery, diluted dressing - a small step that's easy to skip and easy to notice when you don't.
Pasta & grain water
Pasta and rice absorb water as they cook, and that's the only real chance the food has to season itself from the inside rather than relying entirely on a sauce.
How to use it: Salt the pot generously once it's at a rolling boil - it should taste distinctly seasoned, closer to a light broth than plain water. For rice and other grains cooked by absorption, salt the water before adding the grain so it distributes evenly.
Under-salting the pasta water is one of the most common reasons a home-cooked pasta dish tastes flatter than a restaurant's, even with the same sauce.
Fish & seafood
Fish has a more delicate protein structure than meat and a much shorter window before salt starts to firm and dry it out, especially for thin fillets.
How to use it: Salt shortly before cooking - 10 to 15 minutes for most fillets - rather than hours ahead. Firmer, meatier fish like salmon can take a slightly longer dry brine if you want a firmer, more seasoned result.
If a fillet looks like it's "weeping" white beads on the surface, it's been salted too long before hitting the pan - rinse and pat dry, and salt closer to cooking time next time.
Baking & desserts
Salt in baking isn't primarily about savoriness - it controls how yeast ferments, tightens gluten structure, and sharpens sweetness so a dessert doesn't taste flat or one-note.
How to use it: Measure by weight or use fine table salt for accuracy, since baking is far less forgiving of the density differences between salt types than savory cooking is. In yeasted doughs, keep salt from direct contact with yeast until mixing, since high concentrations can slow fermentation.
A pinch of salt in a caramel or chocolate dessert isn't there to be tasted on its own - it's there so the sweetness reads as rounder instead of just sugary.
Brining & curing
A wet brine or a cure uses a much higher, sustained concentration of salt over hours or days to season deep into a large cut, firm up texture, and - in curing - preserve it by making the environment inhospitable to spoilage bacteria.
How to use it: Follow a tested ratio of salt to water (or salt to meat weight, for a dry cure) rather than eyeballing it; curing in particular depends on precise concentrations to be both safe and effective.
