The Molecular Case
for Stainless Steel

What actually happens at the microscopic level - and why fat, heat sequencing, and patience are the only tools you need.

At room temperature, the steel's microscopic pores are contracted and open. Without fat to act as a barrier, food proteins physically enter these cavities and form metal-protein bonds - the same mechanism as oxidation adhesion.

⚠ Result: Food tears when lifted. The protein has chemically anchored to the steel surface.

Fat Creates a
Molecular Barrier

Heat expands the steel's pores. Fat molecules - long hydrocarbon chains - flood in and coat every cavity. They bond weakly to the steel surface but do not bond to food proteins. Food literally floats on a lipid layer.

✓ Result: Food lifts cleanly. The fat sacrifices itself - it's what browns and chars, never the steel.

Water Tells You
When to Cook

Drop water on a cold-ish pan: it sizzles flat, evaporates fast, spreads and sticks. Drop it on a properly hot pan: it instantly creates a thin vapor layer beneath itself - the Leidenfrost effect. The droplet beads, rolls, and dances. That's your signal.

✓ Pan is ready when water beads and skitters. Then add fat. This is non-negotiable.

Dry Pan First

Set to medium-low. No fat yet. Steel must expand its pores before fat goes in.

Water Test

Drops bead and dance? Pan is ready. Flat sizzle = still too cold. Wait.

Add Fat

Oil or butter floods the expanded pores. Wait for it to shimmer - barrier is set.

Don't Move It

Food releases when a crust forms. Still sticking = not ready. Patience is the technique.

Best - Delicate

Butter or Ghee

Eggs, fish, scallops. Adds deep flavor. Ghee handles higher heat without burning.

Smoke Point

Good - High Heat

Avocado or Grapeseed

Neutral flavor. High smoke points. Best for chicken, steak, or anything needing a hard sear.

Olive Oil

Low smoke point. Burns and turns bitter on medium-high heat. Defeats the whole technique.

Fat in a Cold Pan

Oil pools in the center instead of coating. Pores haven't expanded. No barrier forms. Classic beginner error.

Too Much Heat

Cranking heat to compensate for sticking burns the fat. Acrolein forms. Flavor is ruined and sticking gets worse.

Too Little Fat

Bare steel patches remain exposed. Food bonds directly there. Thin coverage looks coated - it isn't. Coat fully.
